An all time favourite! noodles tossed with garlic and vegetables or any other ingredients of your choice like mushrooms etc. This celebrated chinese dish gets its name from the chinese province of hakka. It is very quick and easy to make and perfect to serve with a gravy of your choice. . .

Preparation Time: 15 minutes
Cooking Time: 7 minutes
Makes 2 servings

Ingredients

For The Chilli Oil
1/4 cup oil
5 whole dry kashmiri red chillies , broken into pieces

For The Noodles
2 cups boiled noodles
2 tbsp oil
1/4 cup finely chopped spring onions whites
2 tsp finely chopped garlic (lehsun)
2 to 3 whole dry kashmiri red chillies , broken into pieces
1/2 cup thinly sliced carrots
1/4 cup shredded cabbage
1/2 cup thinly sliced capsicum
1 tsp soy sauce
salt to taste
a pinch of black peppercorns (kalimirch) powder
2 tbsp finely chopped spring onion greens

Method
For the chilli oil

1. Heat the oil in a deep pan on a high flame till it smokes.
2. Add the red chillies, cover with a lid and switch off the flame.
3. Allow it to cool for some time and strain it using a strainer. Keep aside.

For the noodle.

    Servings - 3

    INGREDIENTS
    Water - 1 litre
    Noodles - 100 grams
    Oil - 50 milliliters
    Ginger - 1 tablespoon
    Garlic - 1 tablespoon
    Green Chili - 1 teaspoon
    Black Pepper - 1/2 teaspoon
    Salt - 1 tablespoon
    Onions - 50 grams
    Bell Pepper (Yellow, Red, Green) - 150 grams
    Soy Sauce - 1 teaspoon
    Vinegar - 1 teaspoon

    PREPARATION
    1. In a heavy skillet, add 1 litre of water. Put the noodles in the skillet and allow them to cook. Drain and rinse them in cold water.
    2. Take another heavy skillet and add 50 milliliters of oil, 1 tablespoon ginger, 1 tablespoon garlic, 1 teaspoon green chili, 1/2 teaspoon black pepper, 1 teaspoon red chili, 1 tablespoon salt and stir.
    3. Add 50 grams onions, 150 grams bell pepper, 1 teaspoon soy sauce, 1 teaspoon vinegar and saute for 2 - 3 minutes until they are half done.
    4. Toss and stir fry for 2 - 4 minutes.

    Crispy paper dosa is a super-star whose fame has carried it from south india to the most famous restaurants all over the world! as the name suggests, this dosa is golden brown, crispy and so thin that a huge dosa can be made with just a ladle or two of batter. In hotels, it is generally folded up into a cone or roll before serving, making it a hot favourite amongst kids. Serve hot with chutney and sambhar for a delicious south indian meal.

    Preparation Time: 2 minutes. Cooking Time: 15 minutes. Makes 10 dosas.
    Soaking Time: 3 to 4 hours.

    ½ cup raw rice (chawal)
    ¾ cup urad dal (split black lentils)
    ½ cup rice flour (chawal ka atta)
    Salt to taste
    Ghee for greasing and cooking

    For serving
    Coconut chutney
    Sambhar

    1. Wash and soak the raw rice and urad dal separately for 3 to 4 hours and drain well.
    2. Combine the rice, urad dal and rice flour and blend in a mixer to a smooth paste using enough water to get a batter of thick pouring consistency.
    3. Add the salt and mix well.
    4. Heat a non-stick tava (griddle) and grease it lightly using ghee.
    5. Sprinkle a little water on the tava (griddle) and wipe it off gently using a cloth.
    6. Pour a ladleful of the batter on it and spread it in a circular motion to make a 225 m

    Celebrated chef and cookbook author Tarla Dalal (77) passed away on Wednesday at her south Mumbai residence, reportedly following a cardiac arrest. She is survived by three children, and a legacy of over 100 cookbooks and thousands of recipes.

    The Padma Shri awardee was a household name for her vast selection of cookbooks devoted to vegetarian cuisine — both Indian and global. Long before the advent of the 'celebrity chef' culture, she had viewers jotting down instructions for everything from kadai paneer to pitch-perfect chocolate sponge cake through her popular television show 'Cook It Up With Tarla Dalal'.
    'She was, and will always be, India's first food celebrity,' says chef Sanjeev Kapoor. 'Her books made it possible for many millions of people to know about international food in a very affordable and accessible way.'

    Dalal would collect cookbooks on her trips to different countries, modify recipes to suit vegetarian palates back home, and then learn them herself, Kapoor says. These would then be served to her family, and subsequently, reach generations of aspiring cooks.
