1/2 white onion diced
2 tablespoons cornstarch
1 cup of water
1. Add diced onions and celery to roasting pan (don't clean after removing turkey and drippings) and saute until translucent (about 5 minutes).
2. Add drippings.
3. Whisk cornstarch into water and add to pan.
4. Bring to boil.
5. Allow to thicken while constantly stirring and remove from heat

To make gravy using the drippings from the turkey, first you'll need to de-fat the drippings. Place a large zip-top plastic bag in a bowl, fold back the opening of the bag, and pour the drippings into the bag. Once the fat rises to the top of the bag—you can tell when you see a layer of fat forming at the top of the liquid—snip a small hole in the bottom corner of the bag, and drain the defatted liquid into a measuring cup, stopping before the fat layer reaches the opening. Discard the bag with the fat.
Pour the defatted drippings into a saucepan and add flour and additional broth, if needed. Stir in the flour with a whisk, and cook over medium heat until the mixture is thickened, stirring constantly with the whisk. Once the gravy has thickened, you can season to taste before serving.

Just in time for Thanksgiving Day, here is our simple and fast Cajun Turkey Gravy. This is just the Gravy part, part one covers the Cajun Turkey that gave these drippings.
Normally we use the broth for our stuffing to make it Cajun style too. We only use the fat for the roux and add chicken stock or water for the gravy. If you use the broth for your gravy, it WILL increase the heat level many fold.
Our family loves hot and spicy food, so this is not an issue for us. Just a warning for others. The broth makes for a unique stuffing and is very tasty.
Over all, the heat level of the gravy when done with chicken stock or water is only a tingle. Great Grandpa eats it and 'loves' it. He refuses to eat anything to spicy. He calls this 'just right'. It has a lot of flavor with a mild tingle. Try it over mashed potatoes, biscuits, fried chicken, french fries go well with it too.

3 Cups Chicken Stock (Use the Turkey Broth at your own risk, Water is fine too)

Bake at 350 degrees (F) for a little more than 2 hours, or until temperature of turkey breast meat reaches 170 degrees (F) and temperature of turkey leg meat reaches 180 degrees (F). (Remove aluminum foil after 1 hour of cooking, to let the turkey get a crisp, brown skin.) Transfer cooked turkey parts from roasting pan to cutting board or boards. Tent all cooked turkey loosely with aluminum foil. Let turkey rest 5 to 10 minutes. While turkey is resting, make turkey gravy: Pour off and discard fat from top of turkey broth in roasting pan.
