There are lots of different ways to make giblet gravy, of course. This is the quickest, easier way to me. Remember to serve in a lovely gravy boat with a gravy ladle! Directions below!

Drippings from turkey - ( I used the giblets in the dressing...remember...this is a quick and EASY version!)
1 stalk celery diced
1/2 white onion diced
2 tablespoons cornstarch
1 cup of water

1. Add diced onions and celery to roasting pan (don't clean after removing turkey and drippings) and saute until translucent (about 5 minutes).
2. Add drippings.
3. Whisk cornstarch into water and add to pan.
4. Bring to boil.
5. Allow to thicken while constantly stirring and remove from heat.
