Ingredients/ Method
2-3 tbsp oil
1 tsp mustard seeds
3/4 tsp cumin seeds
1/2 cup chopped onions
2 cups spinach
Salt and red chilli powder
1 tbsp minced garlic
250 gms chopped spinach
1 tsp curry powder
Method: Heat Oil and add in mustard and cumin seeds. Add in onions and cook them for few secs. Add spinach. Mix in minced garlic, salt and chilli pwd. Add mushrooms once spinach is lightly done. Cook until mushrooms are almost done. then add curry powder and give few extra mins for all flavours to combine.
Serve with roti/ paratha.

Aloo Palak is a North Indian vegetarian, iron-rich, vibrant green curry featuring pureed spinach and potatoes that are simmered in spices and flavored with dried fenugreek leaves and fresh cream. Makes for light, healthy and creamy textured curry and goes well with phulkas or parathas.
Ingredients for ALOO PALAK FRY:
300 g spinach, fresh or frozen
2 garlic cloves, roughly chopped
1 inch fresh ginger, roughly chopped
2 onions, chopped
1 -2 green chilies, chopped with seeds
200 g waxy potatoes, peeled and cubed
1 teaspoon turmeric
4 tablespoons ghee or 4 tablespoons butter
1 teaspoon cumin seed
1 teaspoon garam masala
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1 tablespoon fresh cream (optional)
salt
How to make ALOO PALAK FRY:
1 - In a pan cook the spinach with garlic, ginger, onions and the green chilies for about 5-10 minutes.
2 - Remove from the pan and blend to a fine puree and keep aside.
3 - In the meantime boil the potatoes with salt and turmeric until done, apprximately 10 minutes and set aside when done.
4 - Heat ghee in a pan, fry cumin seeds along with spinach-onion paste and simmer for a few minutes.

Ingredients/Method
8-10 baby eggplants/ brinjal
2 tbsp tomato paste
1 tsp salt ( adjust per taste)
1 tsp turmeric
1 tsp curry powder
1 tsp red chilli powder
2 -4 tbsp oil
1 large ( or 2 medium size onions)
1 tsp cumin seeds/ Jeera
2-3 cloves of minced garlic
1 tsp mustard seeds
2 small potatoes
Cilantro and green onions for garnish
Method:
Chop Eggplant and potatoes into bite size pieces.
Heat oil and fry cumin and mustard seeds. After 30 secs, add onions and garlic. Mix well and add salt, chilli powder and turmeric.
After few mins add eggplant and potatoes. Cook for 15 or so mins. Once 50-60 % done, add tomatoe paste and curry powder. Mix well and cook until done. Add green onions on top along with cilantro leaves. Serve hot with roti or parantha.

Recipe/ Ingredients
2 cups Long grain rice
Oil for cooking
Salt per taste
1 chopped Onions and bell peppers
1 tbsp garlic minced
1 tsp paprika or chilli powder.
1 cup crushed tomatoes
4 cups of water
- Saute Onions and bell peppers in oil with garlic, salt, paprika.
- Add rice and brown them. Add tomatoes. Mix well. Add water.
- Cook until rice are done and water has evaporated.
Serve with curry or enjoy by itself.
