Ingredients/Method
1 cup vermicelli
2-4 tbsp oil
1/2 tsp hing/ asafoetida
1 tbsp dried curry leaves
1 tsp mustard seeds and 1 tsp cumin seeds
1 tsp chilli powder
2 tbsp grated ginger
1 small piece of onion chopped
Salt per taste
1 tsp Turmeric ( Haldi)
1/2 cup peas and 1 cup ribbon Carrot
1/4 cup Cashews
2 tbsp lemon juice
2 tbsp crushed peanuts ( roasted or unroasted)
Method:
- Boil vermicelli. Make sure that you put them in hot water. As soon as they are tender, run them under cold water. do not overcook or they will become mushy.
- Next in a pan, heat oil. When the oil is hot, add asafoetida, unroasted peanuts, mustard seeds and cumin . Give them 30 secs and add ginger and onion. Mix well.
- Add veggies and salt, chilli powder and Turmeric. Mix and cook until almost done.
- Add noodles. Mix well. Add lemon juice.
- Garnish with cashews and enjoy warm.

The taste bud tingling aloo tikki chaat is a popular and favorite tikki or cutlet recipe with mashed boiled potatoes, corn and spices as fillings. Garnish the aloo tikkis with imli chutney, curd, coriander chutney, chaat masala, etc and the lip smacking aloo tikki chaat would be ready to eat.
Preparation Time: 10 Mins
Cooking Time: 8 Mins
Ingredients for Aloo Tikki Chaat:
2 big sized potatoes
1/4 ' piece of ginger (adrak)
5 to 6 cloves of garlic (lehsun)
1/4 bunch of coriander (dhania) leaves
salt to taste
2 to 3 green chillies
200 ml curds (dahi)
1 katori of tamarind (imli) pulp
1 pc of jaggery (gur)
1 cup warm water
How to make Aloo Tikki Chaat:
1 - Pressure cook potatoes&soakimli in water
2 - Chop green chillies/corriander
3 - Ground ginger/garlic to a fine paste.
4 - Grate potatoes+g/g paste, corriander&chillies
5 - Mix&form balls
6 - Lightly flatten them&shallow fry
7 - Add jaggery to imli pulp
8 - Take a bowl.place tikki in it
9 - Spoon imli pulp&curds over it.sprinkle ginger jullienes&serve

Salt per taste
Oil for cooking
1/2 tsp cumin seeds
1/2 tsp paprika or chilli powder
1/2 tsp turmeric
1 tsp curry powder or spice blend of choice
green onions for garnish
1 tbsp garlic cloves minced
1 small onion chopped
Method:
Blend cauliflower or grate it. Heat oil in a pan. Fry cumin, onions, salt, chilli powder, turmeric and garlic cloves together until onions no longer raw. Add cauliflower. Mix well. Cover and let cook for 5-10 mins. Once done, season with spice blend of choice and add green onions as a garnish. Enjoy.
