    Chickpea Coconut Curry with Butternut Squash | Vegan Healthy Tasty Recipe

    Butternut Squash and Chickpeas cooked together with coconut milk in this tasty curry make for a wonderful meal. Serve this over rice or with rice/roti..This dish is wholesome, nutritious, quick to make ( in pressure cooker) and tastes delicious. I usually make it in bulk and freeze portions for later use.

    Ingredients/Method
    2-3 tbsp Oil for cooking
    1 tsp cumin seeds
    1 small chopped onion
    1 tbsp minced garlic
    2 tsp curry powder
    2 small chopped tomatoes
    1/2 to 1 cup water
    400 ml Coconut milk ( 1 can)
    salt per taste
    1 tsp red chilli powder
    1 tsp turmeric
    2 cups chopped butternut squash
    2 cups of chickpeas ( uncooked and I soak these in water overnight)
    1 tsp dried fenugreek leaves ( kasoori methi)
    4-5 stalks of cilantro chopped ( for garnish)

    1. Soak chickpeas in water overnight (or atleast 2 hours) If you are using canned chickpeas then this step could be eliminated.
    2. In a hot pressure cooker, add oil and stir in onions, cumin seeds.
    3. Add Squash, salt, turmeric and chilli powder. Mix well. Add garlic minced.
    4. After few mins, add tomatoes and let them become tender.
    5. Add chickpeas ( discard water they were soaking in), curry powder and coconut milk.
    6. Add water as needed. Mix everything well and add dried fenugreek leaves.
    Cover the cooker and cook on high for a whistle. After 1 whistle, turn heat to medium and cook for another 3-4 whistles. Turn off the heat. Let cooker cool down then open, garnish with cilantro and serve with rice.

    Tofu Manchurian is a healthy, quick, vegan and flavourful dish that you can easily prepare at home and enjoy on its own or with rice, noodles or even quinoa.

    Ingredients/ Method

    350 gm firm Tofu
    For marinading Tofu:
    2 tbsp corn starch
    1/2 tsp salt and pepper
    1/2 tsp garlic powder
    1/2 tsp paprika
    2 tbsp Soy sauce and 1/4 cup water

    2- 4 tbsp oil
    1 onion
    1 small green chilli
    2 tbsp each Ginger and garlic chopped
    1/2 tsp salt
    1 tsp Red chilli flakes
    1 tbsp Soy sauce
    2 tbsp vinegar
    1 green bell pepper
    1 cup water + 1 tbsp corn starch to make gravy

    Garnish: green onions chopped

    Method:
    - Cut Tofu into bite size pieces.
    - Mix all marinade spices and soak Tofu in the marinade for atleast 10 mins. Longer the better. Tofu can soak in flavour from the spices.
    - Next when you are ready to cook, heat oil in a pan and fry tofu until golden brown and set aside.
    - In the same wok or another, heat oil and stir in Onions, ginger garlic, green chillies and salt and chilli flakes. Let the onions become translucent. Add in bell peppers, vinegar and soy sauce. Stir fry for few more mins and then add water ( in which we have dissolved corn starch). Allow the water to evaporate. Tofu will become glossy and gravy will thicken up. Garnish with green onions and serve with rice, noodles or quinoa

    Homemade Salad Dressing

    2-3 tbsp Tahini
    1/8 cup olive oil
    2-3 tbsp lemon juice

    - Combine all ingredients to make your salad dressing. Mix it with all the veggies and let it chill. Enjoy after 10 mins.

    Take any two-three kinds of vegetables such as cauliflower, carrot, peas. The vegetables with peels should be soaked for 2 hours in the water. After that wash and rinse them well in the running tap water. Take care that after cutting, do not wash the vegetables again. After washing again, the minerals and Vitamins pass out through water. Now it is best to boil the vegetables in the clay handi. Boil them by adding a little water. If it is not possible, then the second option is to cook them in a steel steamer. Take care that any pots that are kept on the fire should not be of aluminum.

    Let's learn to make a vegetable in the steamer. As you can see that it is in two parts. Pour about 100 grams of water in the bottom part. The second upper part is with holes and I will put in it all these vegetables carrot, cauliflower and peas already cut by me. After putting all the vegetables in it, we will cover it with a glass lid and keep it on flame for 10 to 15 minutes

    In a short time you will see that the vegetables will start to smell like the vegetables. You will know that the vegetables have become half cooked. Now till the time it is cooked on the flame we will prepare gravy on another flame.

    Prepare 7 things to make the gravy. Indigenous tomatoes, raw coconut flesh, green coriander leaves, curry leaves, roasted cumin, rock salt and green chilli. The indigenous tomatoes are like this. You can take 2 to 3 for one person. You see that there is a crown on the tomatoes. This is round in shape and tastes sour. The other is Mumbai tomatoes which is oval in shape. We do not have to take it if indigenous tomatoes are available. The second ingredient is raw coconut flesh. Take a quantity of 50 grams and either grate it or cut it in small pieces. The third ingredient is sendha salt which is used by us during fasting. If it is not av
